Five Delicious Ways to Enjoy those Summer Berries

Say it isn’t so but, the countdown to apple crisp and cider has begun. While my thoughts are fleeting off to Fall, Summer fruits are still in their prime.

Having an abundance of fresh berries around means its time to get creative. I’ve made the pies, ice creams and salads so it’s time to serve up berries and keep them guessing.

Delicious Berry Recipes for the End of Summer

1. Sugar Cookie Berry Bites

No real recipe needed here. Just sugar cookie mix baked in a mini muffin tin topped with a teaspoon of lemon curd a few berries. Bake per directions of the cookie recipe. Sprinkle with powdered sugar to serve.

 

 

 

2. Berries with Creme Fraishe

Instead of serving berries with whipped cream or on top of a sponge cake, fill a small bowl with berries and pour on Creme Fraishe. Creme Fraishe can be purchased at most grocers. I add a couple of teaspoons of sugar and stir it up before serving. You will want to do the finger taste to bring it to the desired sweetness before serving. I like this because not many have had berries this way.

 

 

 

3. Grilled Strawberries

This is so delicious for those end of summer parties. Just put the strawberries in a grill basket on a grill thats about 400 °. You will have to stand there and turn them so they cook about 2 minutes on each side. You will see the berries become translucent. You are not looking to char the berries, just activate the natural sugars. Serve them warm over icecream or I usually do brownies! Soo good!

4. Blackberry Ricotta Flatbread

This piccollage pretty sums up this flatbread. You need blackberries, flatbread, ricotta, mozzarella, gorgonzola or blue cheese and fresh basil. First, smash the blueberries with a fork for the base; add to the flat bread. Place drops of ricotta on the flatbread and fill inbetweeen with mozzarella. Bake at 375 for 10 – 12 minutes. Just enough to heat and melt the cheese. Remove, sprinkle with gorgonzola and fresh basil to serve.

Cool Off with a Healthy Summer Treat

One of my favorite parts of summer is all of the amazing, mouth-watering fresh fruits; cherries being at the top of the list. Refreshing Peach-Mango Smoothies

This has been a whirlwind of a Summer since returning from vacation. I have been off the grid but on the scene with smoothies. I’ve been serving up smoothies around town – literally! From the news station to the mall and everywhere in between. People love SIMPLE smoothie recipes; the easier the better.  The Peach-Mango Smoothie was refreshing for our hot summer day.

For the perfectly blended smoothie I use the Vitamix 750. I prefer to use the manual controls to blend to my desired thickness. I like it smooth with no chunks of ice. Keep Your Smoothie Low in Sugar

It’s another one of those ”National” Holidays: National Smoothie Day! We are definitely celebrating this made-up holiday.

To celebrate I’m serving up your basic mixed berry smoothie, I’m breaking the veggie trend and going basic. The mixed berry smoothie appeals to people of all ages and can be made in various ways .

But, no matter what kind of smoothie you are making be mindful of your ingredients. Use 2% or high protein Greek yogurt, they curb hunger longer than nonfat. Never use a mixed berry yogurt. NEVER use canned fruit and always read the ingredients on your protein powders. A lot of protein powders are packed with sugars and are high in calories. Look for a protein powder that has less than 5 carbs a scoop.

Stay away from artificial sweeteners – they trick your brain and have been proven to cause weight gain. Opt for all natural honey if you want to add a bit of extra sweetness. Life Changing Spinach Smoothie

Do you cringe at the sight of GREEN SMOOTHIES? Through my experiences as sampling these to the public, I get a look of hesitation. However, the best part is they ALWAYS love it and are surprised at how delicious it is.

True story: A family with an eight year old boy curiously came to my serving table to see what I was sampling. Once the boy saw there was spinach in the beverage he protested and there was no way he was going to try it. But, with some coaxing and bribery he agreed.

Once he took a sip his eyes lighted up! He threw up his arms and shouted “Popeye”! That made my day. His father even came back to the table to make sure he had the recipe; truly a dietary, life changing experience  for this family. I was thrilled and happy to know that this boy will be getting healthy vegetables and fruits in his diet.
