Sometimes, No Recipe is The Best Recipe

I’m sure at one time or another you have come home from a busy day with no idea of what to make for dinner. Happens to me quite often but, sometimes no recipe can be the best recipe.

Check out this leftover, bbq rotisserie chicken pizza which turned out to be one of the best pizza’s I have ever had.

This was literally made from leftovers and whatever was in the refrigerator.

  • rotisserie chicken
  • bbq sauce
  • onion rings
  • mushrooms
  • chopped onion
  • mozzarella cheese
  • blue cheese dressing
  • pizza dough from the bakery( I always keep one on hand as a go to)

My point being: get creative, let no food go to waste and stop stressing over that ”perfect” recipe.

Chipotle Mango Chicken Stands Out Above the Rest

If you love sweet heat, go with Cole & Mason Chipotle Mango seasoning for a burst of flavor that is out this world. It is restaurant quality in your own kitchen!

Sprinkle on the seasoning and rub down chicken breasts the night before; cover and remove 30 minutes prior to grilling. Top with fresh Mango-Pineapple Salsa for an out of this world, low-fat meal.

This salsa takes only 15 minutes to prep; if you buy chopped ingredients, only 5 minutes and you’re done!


1 1/2 cup fresh or frozen chopped mango*

1 1/2 cups fresh or frozen pineapple*

1/4 cup diced red onion

1/2 cup sweet red pepper

3 or 4 sprigs of fresh cilantro chopped

1/2 squeezed lemon

1/2 squeezed lime


Toss mango, pineapple, onion and pepper. Add a dash of salt, juice from half lemon and half lime and toss more. Sprinkle with fresh cilantro and lightly toss. Set aside until chicken is done.

*strain juices after chopping and before tossing if there is to much liquid

Get creative with Leftover Chicken

Typically I hate eating leftovers. But, I have gotten creative and come up with a couple of creative ways to use that leftover chicken and stretch my dollar.

The first is Chicken Cordon Bleu Pizza. The night before we went out and I couldn’t finish my meal. So, I brought it home and of course did not want it to go to waste so with fresh pizza dough I made an individual size Chicken Cordon Bleu Pizza. It did not have a red sauce. The base was simply garlic and olive oil.

A few days later, rotisserie chicken was brought home. The next day I turned what was left of the breast into a fresh salad. It was delicious; especially since some of the veggies came from my garden.
