It’s 5:00pm, you’re on your way home from work and you’re thinking, “WTF am I going to make for dinner?”. Clueless right? Well, while sitting in the parking lot of the grocery I picked up my phone before going in and there it was – my dinner! Thank God for Instagram. If for nothing else, I got my inspiration for dinner from a delicious looking veggie taco. There was no recipe but, that didn’t matter I could figure it out. Veggie tacos are better than I had every imagined. I had never had a veggie taco before and I will probably never eat a meat taco again for the simple reason that I am trying to eat healthier and with the veggie taco I didn’t feel like an over stuffed, weighed down blob. Take a look at these tacos and GO CRAZY! The key is THE GRILL, GRILLED CORN, GRILLED TORTILLAS and of course, taco seasoning. Sprinkle the taco seasoning on the corn (we used a Ray Garcia, Chipotle Lime from Williams Sonoma) toss it on the grill at 400° for approximately 15 – 20 minutes turning so it doesnt burn. I have a lodge cast iron griddle that I use on my grill for tortillas and pizzas, etc. Throw on the tortillas about 5 minutes before the corn is done and you are ready to start building your VEGGIE TACO.
The traditional meat and cheese has been replaced with corn, avacado, tomato, chives, a splash of fresh lime and chipotle mayonaisse.
