- 1/2 tsp Grey Poupon (dijon mustard)
- 16 oz Elbow macaroni (cooked)
- 2 tbsp All purpose flour
- 1/8 tsp Kosher salt
- 3/4 cup Whole milk (room temperature)
- 2 tbsp Unsalted butter
- 1 1/4 cup Sharp cheddar cheese (shredded)
- 1/2 cup Colby cheese (shredded)
- 2 oz Philadelphia Cream Cheese
- 1/2 cup Half and half
Preheat oven to 375 F. Melt butter in large skillet or Dutch oven over medium-high heat. Whish in flour until smooth. Whisk in Dijon mustard, salt and a dash of pepper. Stir in shredded cheeses, saving 1/4 cup for topping, add cream cheese a little at a time. Stir in half in half last. Thoroughly stir in macaroni and place in a 2 quart baking dish. Bake for 15 – 20 minutes or until golden. Let rest 5 -10 minutes before serving.
