Keto Egg Cups

Easy, delicious and perfect for the Keto diet. Even if your not following the Keto diet these cups are perfect for breakfast or brunch.

  • 4 large eggs
  • 1/2 cup Milk
  • 3/4 cup Shredded Cheddar
  • 1 1/2 cup Baby Bella Mushrooms (diced)
  • 2 strips Bacon (chopped)
  • 2 tbsp Fresh Chives (Chopped)
  • 2 tbsp extra virgin olive oil
  1. Preheat Oven to 400 F bake bacon for 15 minutes. While bacon is baking, put olive oil in small skillet to saute mushrooms. When bacon is done chop and add to mushrooms, stir ingredients.  Bring oven temperature down to 375 F. Whisk eggs and milk to scramble the eggs. Pour eggs into muffin tin, lined with baking cups or spray tin with non-stick spray. Add cheese, chives, bacon and mushrooms in equal portions to each cup. Bake at 375 F for 15 minutes. Serve immediately.

  2. Dice mushrooms; add chopped bacon to mushrooms and stir. Whisk eggs with milk and add chives. Shred cheese.
