Avocado Egg Bake

Simple, delicious and is just as easy to make for one or twenty. This no fuss recipe makes a marvelous presentation.

  • 4 Avocados (halved and pitted)
  • 8 Large eggs
  • 16 Cherry Tomatoes (quartered)
  • 1/2 cup Red Onion (diced)
  • 1 1/2 cup Shredded Cheddar
  1. Preheat oven to 400 F. Slice avocado in half and remove pit. Scrap a small amount out to create a deeper well. Place each half into a muffin tin well for stabilization. Crack an egg into each avocado. Liberally sprinkle each egg cup with tomatoes, onion and cheese. Bake for 10 – 12 minutes.
