Five Delicious Ways to Enjoy those Summer Berries

Say it isn’t so but, the countdown to apple crisp and cider has begun. While my thoughts are fleeting off to Fall, Summer fruits are still in their prime.

Having an abundance of fresh berries around means its time to get creative. I’ve made the pies, ice creams and salads so it’s time to serve up berries and keep them guessing.

Delicious Berry Recipes for the End of Summer

1. Sugar Cookie Berry Bites

No real recipe needed here. Just sugar cookie mix baked in a mini muffin tin topped with a teaspoon of lemon curd a few berries. Bake per directions of the cookie recipe. Sprinkle with powdered sugar to serve.

 

 

 

2. Berries with Creme Fraishe

Instead of serving berries with whipped cream or on top of a sponge cake, fill a small bowl with berries and pour on Creme Fraishe. Creme Fraishe can be purchased at most grocers. I add a couple of teaspoons of sugar and stir it up before serving. You will want to do the finger taste to bring it to the desired sweetness before serving. I like this because not many have had berries this way.

 

 

 

3. Grilled Strawberries

This is so delicious for those end of summer parties. Just put the strawberries in a grill basket on a grill thats about 400 °. You will have to stand there and turn them so they cook about 2 minutes on each side. You will see the berries become translucent. You are not looking to char the berries, just activate the natural sugars. Serve them warm over icecream or I usually do brownies! Soo good!

4. Blackberry Ricotta Flatbread

This piccollage pretty sums up this flatbread. You need blackberries, flatbread, ricotta, mozzarella, gorgonzola or blue cheese and fresh basil. First, smash the blueberries with a fork for the base; add to the flat bread. Place drops of ricotta on the flatbread and fill inbetweeen with mozzarella. Bake at 375 for 10 – 12 minutes. Just enough to heat and melt the cheese. Remove, sprinkle with gorgonzola and fresh basil to serve.

5. Mixed Berry Smoothie

We All Can Empower and Teach Life Skills

With kids its not just about ingredients and recipes.

It is incredibly rewarding to be running the Junior Chef Summer Camp. Not only are the children learning and having a great time but I am learning a few things as well.

I have come to the realization that since home economics classes, as we know it, have disappeared there is a huge need for the community to step up and start empowering children to get in the kitchen and learn about FOOD. Real food; not drive-thru, meals in a bag.

Many parents are overwhelmed with work and lack time to prepare nutritious meals. It would be something if children had the opportunity to explore healthy flavors and learn about nutrition after school. I’m sure life skills programs like this exist somewhere but there aren’t any in my community or school system.

Some of the children I am with this week have never tried many healthy fruits or vegetables. It is rewarding to know I am able to share and enjoy new flavors with the class. The children are excited to try avocado and feta cheese and equally excited to learn how to properly and safely use a knife.

I am grateful to have the opportunity to empower these children to learn life skills and step out of their shells to try new foods.

Maybe I will have to look into teaching life skills. You don’t have to be a Doctor or Nutritionist to help children experience new flavors and get excited about something like avocados instead of a meal with a toy!

There are three more classes this week. Each day is filled with joy, discovery, laughter, nutritious foods and skills to last a lifetime.

Amazing Summer Salad to Try Now

Yes, it’s hard to believe that the end of July is quickly approaching. That means it’s time to take advantage of the delicious fruits of summer!

If you are looking for something on the lighter side to serve on these hot days this sweet and tangy salad is for you!

Ingredients

Serves 2 to 4

2peaches cut/cubed

3 c. cubed watermelon

1/2 cucumber peeled, cubed

2 tbsp. WHITE Balsamic Vinegar

3 oz. Feta Cheese crumbled

Cashews for sprinkling

Mint leaves for garnish


Combine chopped ingredients in a bowl. Add the white balsamic and toss. Chill for 20 minutes, add crumbled feta cheese, sprinkle with cashews and garnish. Enjoy!
