Chipotle Mango Chicken Stands Out Above the Rest

Sprinkle on the seasoning and rub down chicken breasts the night before; cover and remove 30 minutes prior to grilling. Top with fresh Mango-Pineapple Salsa for an out of this world, low-fat meal.
This salsa takes only 15 minutes to prep; if you buy chopped ingredients, only 5 minutes and you’re done!
1 1/2 cup fresh or frozen chopped mango*
1 1/2 cups fresh or frozen pineapple*
1/4 cup diced red onion
1/2 cup sweet red pepper
3 or 4 sprigs of fresh cilantro chopped
1/2 squeezed lemon
1/2 squeezed lime
Toss mango, pineapple, onion and pepper. Add a dash of salt, juice from half lemon and half lime and toss more. Sprinkle with fresh cilantro and lightly toss. Set aside until chicken is done.
*strain juices after chopping and before tossing if there is to much liquid
