Make A Delicious Avocado Egg Bake in Minutes

Breakfast for one or breakfast for twelve has never been easier.

Go for this filling Avocado Egg Bake. I didn’t make toast for myself but a delicious whole grain would be wonderful to serve with this breakfast.

Ingredients

No butter needed. Just healthy goodness.

Slice Avocado in half, remove Pit and place each half into a muffin tin to keep the avocado level. Crack a small or medium egg into a bowl one at a time and spoon into avocado. If you want to be messy just crack the egg directly into the avocado.

Sprinkle with sliced cherry tomatoes, red onion and Colby jack cheese.

Bake at 400 for 10 – 12 minutes. Let cool for a minute then remove from tin to serve and enjoy!

Blow Them Away with Chipotle Mango Chicken

Chipotle Mango Chicken Stands Out Above the Rest

If you love sweet heat, go with Cole & Mason Chipotle Mango seasoning for a burst of flavor that is out this world. It is restaurant quality in your own kitchen!

Sprinkle on the seasoning and rub down chicken breasts the night before; cover and remove 30 minutes prior to grilling. Top with fresh Mango-Pineapple Salsa for an out of this world, low-fat meal.

This salsa takes only 15 minutes to prep; if you buy chopped ingredients, only 5 minutes and you’re done!

Ingredients

1 1/2 cup fresh or frozen chopped mango*

1 1/2 cups fresh or frozen pineapple*

1/4 cup diced red onion

1/2 cup sweet red pepper

3 or 4 sprigs of fresh cilantro chopped

1/2 squeezed lemon

1/2 squeezed lime

Directions

Toss mango, pineapple, onion and pepper. Add a dash of salt, juice from half lemon and half lime and toss more. Sprinkle with fresh cilantro and lightly toss. Set aside until chicken is done.

*strain juices after chopping and before tossing if there is to much liquid

Five Delicious Ways to Enjoy those Summer Berries

Say it isn’t so but, the countdown to apple crisp and cider has begun. While my thoughts are fleeting off to Fall, Summer fruits are still in their prime.

Having an abundance of fresh berries around means its time to get creative. I’ve made the pies, ice creams and salads so it’s time to serve up berries and keep them guessing.

Delicious Berry Recipes for the End of Summer

1. Sugar Cookie Berry Bites

No real recipe needed here. Just sugar cookie mix baked in a mini muffin tin topped with a teaspoon of lemon curd a few berries. Bake per directions of the cookie recipe. Sprinkle with powdered sugar to serve.

 

 

 

2. Berries with Creme Fraishe

Instead of serving berries with whipped cream or on top of a sponge cake, fill a small bowl with berries and pour on Creme Fraishe. Creme Fraishe can be purchased at most grocers. I add a couple of teaspoons of sugar and stir it up before serving. You will want to do the finger taste to bring it to the desired sweetness before serving. I like this because not many have had berries this way.

 

 

 

3. Grilled Strawberries

This is so delicious for those end of summer parties. Just put the strawberries in a grill basket on a grill thats about 400 °. You will have to stand there and turn them so they cook about 2 minutes on each side. You will see the berries become translucent. You are not looking to char the berries, just activate the natural sugars. Serve them warm over icecream or I usually do brownies! Soo good!

4. Blackberry Ricotta Flatbread

This piccollage pretty sums up this flatbread. You need blackberries, flatbread, ricotta, mozzarella, gorgonzola or blue cheese and fresh basil. First, smash the blueberries with a fork for the base; add to the flat bread. Place drops of ricotta on the flatbread and fill inbetweeen with mozzarella. Bake at 375 for 10 – 12 minutes. Just enough to heat and melt the cheese. Remove, sprinkle with gorgonzola and fresh basil to serve.

5. Mixed Berry Smoothie

The ”plastic straw” epidemic and controversy has sparked a lot of conversation. Even thought it may be uncomfortable for some,I believe it’s a good conversation to have. Let’s face it, we have to be responsible enough to care of the environment and if going without plastic straws means we make less waste for my kids, kids I am happy to know I’ve tried to make the world a better place.
