Amazing Summer Salad to Try Now

Yes, it’s hard to believe that the end of July is quickly approaching. That means it’s time to take advantage of the delicious fruits of summer!

If you are looking for something on the lighter side to serve on these hot days this sweet and tangy salad is for you!


Serves 2 to 4

2peaches cut/cubed

3 c. cubed watermelon

1/2 cucumber peeled, cubed

2 tbsp. WHITE Balsamic Vinegar

3 oz. Feta Cheese crumbled

Cashews for sprinkling

Mint leaves for garnish

Combine chopped ingredients in a bowl. Add the white balsamic and toss. Chill for 20 minutes, add crumbled feta cheese, sprinkle with cashews and garnish. Enjoy!

You Can Have Your Cake and Protein Too

I have never had Kodiak Cakes pancake mix or any of their products until today. Now, I am kicking myself, wondering what took so long?!?!

The 100% Whole Grain, protein packed mix is OUTSTANDING! I used the mix to make banana nut muffins. They were moist and flavorful. I precisely followed the recipe on the box; only adding a little personal touch of vanilla bourbon finishing sugar at the end.

As Bloggers having social media accounts means taking the good with the bad. I have no room in my life for negativity. Do you block those people or let it roll?

I am making these little bundles for friends and family in hopes of bringing awareness and inspiration for others to rid their lives of plastic; even if it’s the small things.

Of course a follower got on my case inferring what’s the point, you’re throwing them away anyway! I think she missed the point.

Journey to a Healthier Home: Week One

Week One: Today I am stepping back and looking at all of the things in my kitchen that are unhealthy for the environment. It seems like a mountain and I will never reach the top. I am committed. Committed to contributing to make a difference: It takes a village. One motivating factor is my daughter has been accepted to live in the Sustainable Dormitory on campus. We can support one another. There are several groups out there I am researching and will share once I have a chance to thoroughly investigate. However, what I have found is most of these groups are in the European Nation. I guess we are behind the times.
