I see no problem using a box cake or cookie mix especially when you can dress it up so the results are amazing. I mean as long as it’s delicious, no harm done. There is a time and place to bake from scratch and I rarely have the time or place. So to survive I have adapted to being a Box-Gourmet.
The cookie cups in the photo below were made from a Betty Crocker Sugar Cookie Mix. I doctored it up a bit with vanilla extract; you can also use a small amount of lemon extract for added flavor.
Just follow the package instructions. Put a small amount (about 3/4″ deep) of cookie dough in a mini-muffin cup; make small imprint with index finger, spoon in 1 teaspoon lemon curd, top with a sliced strawberry and a couple of blueberries. Bake at 375 F for 11-13 minutes. Let cool. Sprinkle with powdered sugar and enjoy! #beinspired
